La Tratt has always been at the forefront of our culinary thinking. It is our vanguard restaurant epitomising our vision and attitude. La Tratt’s evolution encapsulates the whole transformative story of dining at Fairfield RSL. Initially a pizzeria, now it is an elegant and sophisticated fine dining restaurant. It could be anywhere in the world, or in Sydney CBD, but it’s here in Fairfield’s RSL Club. You don’t have to travel all the way into the city if you want to have this kind of fine dining experience.

INTERIORS

 

The room, as elegant as it is, is quite sparse. There are high ceilings, hard surfaces, and the ergonomics of the chairs make you sit up. The subtle effect is to communicate that this is a serious dining experience. You are drinking out of Riedel wine and water glasses, there are starched napkins. The finishes are hard but warm and the beautifully elegant light fittings are handblown. All the furnishings in here are about quality and creating theatre – beautiful textures, colours, smells. We wanted something alive in the restaurant so there are always flowers. The mirrors create space and the fireplace was inspired by a restaurant in Las Vegas. We like the concept of fire, hypnotising and comforting, going back to the earliest origins of humans when we gathered together around a fire.

FOOD & WINE

 

The Silver Spoon is the cornerstone for La Tratt. Now there are others: My Italian Heart by Guy Grossi; Grossi Florentino by Guy Grossi and Jan McGuinness; Made in Italy by Giorgio Locatelli; Gastronomy of Italy by Anna Del Conte and Ligurian Kitchen from Lucio Galletto. We’re very conscious of giving those chefs the credit. Our aim is to discover, not to invent. Each menu item has a symbol to show where the recipe was sourced. It’s about respect for these great chefs. The food on the La Tratt plate has to look beautiful. There are times when food on the plate is meant to look rustic, like some of our dishes in Summer House, but here the placing of food on the plate is a composition in its own right. The food looks beautiful because the place is beautiful.
